Description
A refreshing watermelon salad with cucumber and feta.
Ingredients

- 4 cups watermelon, cubed
- 2 cups cucumber, diced
- 1 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the watermelon and cucumber.
- Add the crumbled feta and chopped mint.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- Drizzle the dressing over the salad.
- Season with salt and pepper.
- Toss gently to combine.
- Serve chilled.

- Use seedless watermelon for best results.
- Adjust the amount of feta to your taste.
