Description

A refreshing summer salad combining juicy watermelon, creamy feta cheese, fresh mint, and a sweet balsamic glaze.


Ingredients

  • Watermelon: 4 cups, cubed (about half a medium watermelon)
  • Feta cheese: 1 cup, crumbled
  • Fresh mint leaves: 1/2 cup, roughly chopped
  • Balsamic glaze: 1/4 cup
  • Olive oil: 1 tablespoon
  • Salt: to taste
  • Black pepper: to taste

Instructions

  1. Cut the watermelon in half and remove any seeds. Cut the flesh into bite-sized cubes and place in a large mixing bowl.
  2. Crumble the feta cheese over the watermelon cubes in the bowl.
  3. Roughly chop the fresh mint leaves and add them to the bowl with the watermelon and feta.
  4. Gently toss the ingredients together using a large spoon or spatula.
