Ingredients
- Watermelon: 4 cups, cubed (about half a medium watermelon)
- Feta cheese: 1 cup, crumbled
- Fresh mint leaves: 1/2 cup, roughly chopped
- Balsamic glaze: 1/4 cup
- Olive oil: 1 tablespoon
- Salt: to taste
- Black pepper: to taste
Instructions
- Cut the watermelon in half and remove any seeds. Cut the flesh into bite-sized cubes and place in a large mixing bowl.
- Crumble the feta cheese over the watermelon cubes in the bowl.
- Roughly chop the fresh mint leaves and add them to the bowl with the watermelon and feta.
- Gently toss the ingredients together using a large spoon or spatula.
- Drizzle the balsamic glaze and olive oil over the salad, then season with salt and black pepper to taste. Serve immediately.
