Description
A healthy and filling salad made with warm sweet potatoes and black beans.
Ingredients

- 2 medium sweet potatoes, peeled and cubed
- 1 can (15 oz) black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/4 cup red onion, chopped
- 1/4 cup cilantro, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the cubed sweet potatoes with olive oil, cumin, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a large bowl, combine black beans, red bell pepper, red onion, and cilantro.
- Add the roasted sweet potatoes to the bowl.
- Drizzle with lime juice and toss to combine.
- Serve warm or at room temperature.

- Adjust the spices according to your taste.
- This salad can be stored in the fridge for up to 3 days.
