A delicious Warm Cinnamon Apple Date Cake topped with a rich Maple Toffee glaze.

- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)
- 2 cups apples, peeled and diced (about 2 medium apples)
- 1 cup dates, pitted and chopped
- 1/2 cup walnuts or pecans, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
- In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined.
- Gently fold in the diced apples, chopped dates, and nuts (if using) until evenly distributed throughout the batter.
- Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- In a saucepan over medium heat, melt the butter. Stir in the brown sugar, heavy cream, and maple syrup. Bring the mixture to a gentle boil, stirring constantly. Allow it to simmer for about 2-3 minutes until slightly thickened. Remove from heat and stir in the vanilla extract.
- Once the cake has cooled, drizzle the warm maple toffee glaze over the top, allowing it to drip down the sides.
- Slice the cake and serve it warm or at room temperature. This cake pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.

- For added flavor, consider using a mix of tart and sweet apples.
- Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- This cake can also be made ahead of time and frozen. Just thaw and glaze before serving.
