Description

A delicious Warm Cinnamon Apple Date Cake topped with a rich Maple Toffee glaze.


Ingredients

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)
  • 2 cups apples, peeled and diced (about 2 medium apples)
  • 1 cup dates, pitted and chopped
  • 1/2 cup walnuts or pecans, chopped (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredient mixture to the butter mixture, alternating with the buttermilk. Start and end with the dry ingredients, mixing until just combined.
  6. Gently fold in the diced apples, chopped dates, and nuts (if using) until evenly distributed throughout the batter.
  7. Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  8. In a saucepan over medium heat, melt the butter. Stir in the brown sugar, heavy cream, and maple syrup. Bring the mixture to a gentle boil, stirring constantly. Allow it to simmer for about 2-3 minutes until slightly thickened. Remove from heat and stir in the vanilla extract.
  9. Once the cake has cooled, drizzle the warm maple toffee glaze over the top, allowing it to drip down the sides.
  10. Slice the cake and serve it warm or at room temperature. This cake pairs wonderfully with a scoop of vanilla ice cream or a dollop of whipped cream.

  • For added flavor, consider using a mix of tart and sweet apples.
  • Store any leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
