Ingredients

  • 2 large cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Wash and slice the cucumbers.
  2. Halve the cherry tomatoes.
  3. Thinly slice the red onion.
  4. In a large bowl, combine cucumbers, tomatoes, onion, and parsley.
  5. In a separate bowl, whisk together olive oil, vinegar, salt, and pepper.
  6. Pour the dressing over the salad and toss gently.
