- 1 bell pepper, diced
- 1 zucchini, diced
- 1 carrot, grated
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, cook until softened.
- Stir in bell pepper, zucchini, and carrot; cook for 5 minutes.
- Add diced tomatoes, basil, oregano, salt, and pepper.
- Simmer for 15-20 minutes, stirring occasionally.
- Serve over your favorite pasta.
