Description

Ingredients

  • 1 lb ground turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (28 oz) diced tomatoes
  • 1 cup bell peppers, chopped
  • 1 cup zucchini, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground turkey over medium heat.
  2. Add onion and garlic; sauté until soft.
  3. Stir in bell peppers and zucchini; cook for 5 minutes.
  4. Add beans, tomatoes, broth, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 30 minutes.
  6. Serve hot.
