Ingredients

- 2 cups grated zucchini
- 1 cup grated carrots
- 1/2 cup chopped green onions
- 1/2 cup gluten-free flour
- 2 eggs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- Oil for frying
Instructions
- Grate the zucchini and carrots. Squeeze out excess moisture.
- In a bowl, combine zucchini, carrots, green onions, flour, eggs, salt, pepper, and garlic powder.
- Heat oil in a pan over medium heat.
- Drop spoonfuls of the mixture into the hot oil.
- Cook until golden brown, about 3-4 minutes on each side.
- Remove and drain on paper towels.
- Serve warm.

- Adjust seasoning to taste.
- Can add cheese for extra flavor.
