Description
Vegetarian quesadillas filled with black beans and sweet potato.
Ingredients

- 1 large sweet potato, peeled and cubed
- 1 can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large tortillas
- 1 tablespoon olive oil
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Boil sweet potato cubes until tender, about 10 minutes.
- Drain and mash sweet potatoes in a bowl.
- Add black beans, cheese, cumin, salt, and pepper to the mashed sweet potatoes.
- Heat olive oil in a skillet over medium heat.
- Place a tortilla in the skillet.
- Spread a portion of the filling on half of the tortilla.
- Fold the tortilla and cook until golden brown, about 3 minutes per side.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve.
Notes
- Serve with salsa or guacamole.
- Make sure the sweet potato is well mashed for better texture.
- Use whole wheat tortillas for a healthier option.
