Description

Vegetarian quesadillas filled with black beans and sweet potato.


Ingredients

Scale
  • 1 large sweet potato, peeled and cubed
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Boil sweet potato cubes until tender, about 10 minutes.
  2. Drain and mash sweet potatoes in a bowl.
  3. Add black beans, cheese, cumin, salt, and pepper to the mashed sweet potatoes.
  4. Heat olive oil in a skillet over medium heat.
  5. Place a tortilla in the skillet.
  6. Spread a portion of the filling on half of the tortilla.
  7. Fold the tortilla and cook until golden brown, about 3 minutes per side.
  8. Repeat with remaining tortillas and filling.
  9. Cut into wedges and serve.

Notes

  • Serve with salsa or guacamole.
  • Make sure the sweet potato is well mashed for better texture.
  • Use whole wheat tortillas for a healthier option.
