Description

A colorful and healthy vegetable stir fry with creamy peanut sauce.


Ingredients

  • 2 cups mixed vegetables (bell peppers, broccoli, carrots)
  • 1 cup cooked rice
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon lime juice

Instructions

  1. Prepare your vegetables by washing and cutting them into bite-sized pieces.
  2. In a pan, heat sesame oil over medium heat.
  3. Add garlic and ginger, sauté for 1 minute.
  4. Add mixed vegetables and stir-fry for 5-7 minutes until tender.
  5. In a bowl, mix peanut butter, soy sauce, honey, and lime juice.
  6. Pour the peanut sauce over the stir-fried vegetables and mix well.
  7. Serve the stir fry over cooked rice.
