Ingredients

  • 1 cup grated zucchini
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup vegetable oil
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a baking pan.
  3. Grate the zucchini and squeeze out excess moisture.
  4. In a bowl, mix the grated zucchini, maple syrup, vegetable oil, almond milk, and vanilla extract.
  5. In another bowl, combine flour, cocoa powder, baking soda, baking powder, and salt.
  6. Mix the wet ingredients into the dry ingredients until just combined.
  7. Pour the batter into the prepared baking pan.
  8. Bake for 25-30 minutes or until a toothpick comes out clean.
  9. Let cool before cutting into squares.
