Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup cherry tomatoes
- 1 cup spinach
- 1 avocado
- 1 lemon
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- While quinoa cooks, chop cherry tomatoes and spinach.
- Once quinoa is cooked, fluff with a fork.
- Mix in tomatoes, spinach, olive oil, salt, and pepper.
- Slice avocado and place on top.
- Squeeze lemon juice over the dish before serving.
