Ingredients

Instructions

  5. Once quinoa is cooked, fluff with a fork.
  6. Mix in tomatoes, spinach, olive oil, salt, and pepper.
  7. Slice avocado and place on top.
  8. Squeeze lemon juice over the dish before serving.
