A fresh and vibrant vegan salad featuring artichokes and tomatoes.
Ingredients

- 1 can artichoke hearts, drained and chopped
- 2 cups cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine artichoke hearts, cherry tomatoes, cucumber, red onion, and basil.
- In a separate small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill for 30 minutes before serving.
