  • 1/2 cup coconut cream

  • 1 cup silken tofu
  • 1 teaspoon vanilla extract
  • 1 teaspoon cocoa powder
  • 1 package vegan ladyfingers
  • Cocoa powder for dusting

Instructions

  1. Brew the coffee and let it cool.
  2. In a blender, combine coconut cream, maple syrup, silken tofu, vanilla extract, and cocoa powder. Blend until smooth.
  3. Dip each ladyfinger briefly in the coffee.
  4. Layer the dipped ladyfingers in a serving dish.
  5. Spread a layer of the tofu mixture over the ladyfingers.
  6. Repeat the layers until all ingredients are used, finishing with the tofu mixture on top.
  7. Chill in the refrigerator for at least 4 hours.
  8. Before serving, dust with cocoa powder.
