Delicious vegan thumbprint cookies filled with your choice of jam.
Ingredients

- 1 cup almond flour
- 1/2 cup coconut oil, melted
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup jam of your choice
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix almond flour, melted coconut oil, maple syrup, and vanilla extract.
- Add all-purpose flour and salt, and mix until combined.
- Roll dough into small balls and place on a baking sheet.
- Make an indentation in the center of each ball.
- Fill the indentations with jam.
- Bake for 12-15 minutes until edges are golden.
- Let cool before serving.
Notes
- Use any jam you prefer.
- Store in an airtight container.
- These cookies can be frozen.
