- 1 cup mashed sweet potatoes
- 1 cup almond flour
- 1/2 cup cocoa powder
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips (dairy-free)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the mashed sweet potatoes, almond flour, cocoa powder, maple syrup, coconut oil, and vanilla extract.
- Add baking powder and salt, and mix until smooth.
- Fold in dark chocolate chips.
- Pour the batter into a greased baking dish.
- Bake for 25-30 minutes or until a toothpick comes out clean.
- Let cool before slicing into squares.
Notes
- Store leftovers in an airtight container.
- These brownies can be frozen for later use.
- Adjust sweetness by adding more maple syrup if desired.
