Ingredients

  • 1 cup mashed sweet potatoes
  • 1 cup almond flour
  • 1/2 cup cocoa powder
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (dairy-free)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the mashed sweet potatoes, almond flour, cocoa powder, maple syrup, coconut oil, and vanilla extract.
  3. Add baking powder and salt, and mix until smooth.
  4. Fold in dark chocolate chips.
  5. Pour the batter into a greased baking dish.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let cool before slicing into squares.
