Description
A simple and delicious vegan sushi recipe using fresh vegetables and sushi rice.
Ingredients

- 1 cup sushi rice
- 1 1/4 cups water
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 4 sheets nori
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 avocado, sliced
Instructions
- Rinse sushi rice under cold water until water runs clear.
- Combine rice and water in a pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
- Once rice is cooked, remove from heat and let it cool. Stir in the vinegar mixture.
- Place a nori sheet on a bamboo mat. Spread a thin layer of rice over the nori.
- Arrange cucumber, carrot, and avocado in a line across the rice.
- Roll the sushi tightly using the bamboo mat. Slice into pieces with a sharp knife.
- Repeat with remaining ingredients.
Notes
- Use any vegetables you like.
- Serve with soy sauce or wasabi.
