Description

A simple and delicious vegan sushi recipe using fresh vegetables and sushi rice.


Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 4 sheets nori
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 avocado, sliced

Instructions

  1. Rinse sushi rice under cold water until water runs clear.
  2. Combine rice and water in a pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. In a small bowl, mix rice vinegar, sugar, and salt until dissolved.
  4. Once rice is cooked, remove from heat and let it cool. Stir in the vinegar mixture.
  5. Place a nori sheet on a bamboo mat. Spread a thin layer of rice over the nori.
  6. Arrange cucumber, carrot, and avocado in a line across the rice.
  7. Roll the sushi tightly using the bamboo mat. Slice into pieces with a sharp knife.
  8. Repeat with remaining ingredients.

Notes

  • Use any vegetables you like.
  • Serve with soy sauce or wasabi.
