Ingredients

  • 1 cup of chickpeas, drained and rinsed
  • 1 avocado, mashed
  • 1/2 cup of diced tomatoes
  • 1/4 cup of red onion, finely chopped
  • 1 tablespoon of lime juice
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 1 cup of corn tortillas
  • 1/2 cup of salsa

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine chickpeas, avocado, tomatoes, red onion, lime juice, cumin, salt, and pepper.
  3. Mix well until combined.
  4. Cut corn tortillas into triangles and place on a baking sheet.
  5. Bake tortillas for 10-12 minutes until crispy.
  6. Serve the chickpea mixture with baked tortilla chips and salsa.
