Description

A delicious vegan dish featuring mushrooms stuffed with a savory mixture.


Ingredients

  • 12 large mushrooms
  • 1 cup cooked quinoa
  • 1/2 cup chopped spinach
  • 1/4 cup nutritional yeast
  • 2 cloves garlic, minced
  • 1/4 cup onion, diced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems.
  3. In a skillet, heat olive oil and sauté garlic and onion until translucent.
  4. Add spinach and cook until wilted.
  5. Mix in quinoa, nutritional yeast, salt, and pepper.
  6. Stuff each mushroom cap with the quinoa mixture.
  7. Place stuffed mushrooms on a baking sheet.
  8. Bake for 20 minutes or until mushrooms are tender.
