- 12 large mushrooms
- 1 cup cooked quinoa
- 1/2 cup chopped spinach
- 1/4 cup nutritional yeast
- 2 cloves garlic, minced
- 1/4 cup onion, diced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Clean the mushrooms and remove the stems.
- In a skillet, heat olive oil and sauté garlic and onion until translucent.
- Add spinach and cook until wilted.
- Mix in quinoa, nutritional yeast, salt, and pepper.
- Stuff each mushroom cap with the quinoa mixture.
- Place stuffed mushrooms on a baking sheet.
- Bake for 20 minutes or until mushrooms are tender.
