- 2 cups fresh strawberries, hulled
- 1 can coconut milk
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Blend strawberries in a blender until smooth.
- In a bowl, combine coconut milk, maple syrup, vanilla extract, and lemon juice.
- Add the blended strawberries to the mixture and stir well.
- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- Transfer to a container and freeze for at least 4 hours before serving.
Notes
- Use ripe strawberries for best flavor.
- Can substitute coconut milk with almond milk for a lighter version.
