A simple and healthy vegan spinach pasta sauce recipe.
Ingredients
Scale
- 2 cups fresh spinach
- 1 cup cashews
- 2 cloves garlic
- 1/4 cup nutritional yeast
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
Instructions
- Soak the cashews in water for at least 2 hours.
- Drain the cashews and add them to a blender.
- Add the spinach, garlic, nutritional yeast, olive oil, salt, pepper, and water to the blender.
- Blend until smooth and creamy.
- Taste and adjust seasoning if necessary.
- Serve over your favorite pasta.
