Description

Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 can coconut milk (400 ml)
  • 2 cups vegetable broth
  • 2 tomatoes, chopped
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils under cold water.
  2. In a pot, sauté onion, garlic, and ginger until fragrant.
  3. Add curry powder, turmeric, and cumin; cook for 1 minute.
  4. Stir in chopped tomatoes and cook until softened.
  5. Add lentils, coconut milk, and vegetable broth.
  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  7. Stir occasionally until lentils are tender.
  8. Season with salt and garnish with fresh cilantro.
