A hearty and flavorful vegan red lentil curry.
Ingredients

- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk (400 ml)
- 2 cups vegetable broth
- 2 tomatoes, chopped
- 1 tablespoon curry powder
- 1 teaspoon turmeric
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the red lentils under cold water.
- In a pot, sauté onion, garlic, and ginger until fragrant.
- Add curry powder, turmeric, and cumin; cook for 1 minute.
- Stir in chopped tomatoes and cook until softened.
- Add lentils, coconut milk, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Stir occasionally until lentils are tender.
- Season with salt and garnish with fresh cilantro.
Notes
- Serve with rice or naan.
- You can adjust spices to taste.
- This curry stores well in the fridge for 3-4 days.
