Description
A simple recipe for vegan gluten-free quesadillas.
Ingredients

- 1 cup gluten-free tortillas
- 1 cup shredded vegan cheese
- 1/2 cup black beans, rinsed and drained
- 1/2 cup corn, canned or frozen
- 1/2 bell pepper, diced
- 1/2 onion, diced
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and bell pepper. Sauté until soft.
- Add black beans, corn, cumin, and chili powder. Cook for 5 minutes.
- Place a tortilla on the pan. Add a portion of the filling and sprinkle vegan cheese on top.
- Cover with another tortilla and cook until golden brown. Flip and cook the other side.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm.
Notes
- Use any vegetables you like.
- Adjust spices to your taste.
- Serve with salsa or guacamole.
