Description

A simple recipe for vegan gluten-free quesadillas.


Ingredients

  • 1 cup gluten-free tortillas
  • 1 cup shredded vegan cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, canned or frozen
  • 1/2 bell pepper, diced
  • 1/2 onion, diced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onion and bell pepper. Sauté until soft.
  3. Add black beans, corn, cumin, and chili powder. Cook for 5 minutes.
  4. Place a tortilla on the pan. Add a portion of the filling and sprinkle vegan cheese on top.
  5. Cover with another tortilla and cook until golden brown. Flip and cook the other side.
  6. Repeat with remaining tortillas and filling.
  7. Cut into wedges and serve warm.

Notes

  • Use any vegetables you like.
  • Adjust spices to your taste.
  • Serve with salsa or guacamole.
