A delicious vegan potato bake that is gluten free.
Ingredients

- 4 large potatoes, sliced
- 1 cup almond milk
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 cup nutritional yeast
- 1/2 cup gluten free breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- In a large bowl, combine sliced potatoes, almond milk, salt, pepper, thyme, and sautéed onion and garlic.
- Pour the potato mixture into a baking dish.
- Sprinkle nutritional yeast and gluten free breadcrumbs on top.
- Bake for 45 minutes or until potatoes are tender and top is golden.
Notes
- Serve hot for best flavor.
- Store leftovers in the refrigerator.
- This dish can be made ahead and reheated.
