Description

A delicious vegan pot pie filled with vegetables and a savory gravy.


Ingredients

  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped potatoes
  • 1 cup frozen peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup flour
  • 2 cups vegetable broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 tablespoon soy sauce
  • 1 pre-made vegan pie crust

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large skillet, sauté onion, garlic, carrots, and celery until tender.
  3. Add potatoes and cook for another 5 minutes.
  4. Stir in flour and cook for 1 minute.
  5. Add vegetable broth, thyme, rosemary, and soy sauce. Cook until thickened.
  6. Remove from heat and stir in peas.
  7. Pour mixture into the pie crust.
  8. Cover with the top crust and make slits for steam.
  9. Bake for 30-35 minutes or until golden brown.

Notes

  • Let the pie cool for a few minutes before serving.
