A delicious vegan pot pie filled with vegetables and a savory gravy.
Ingredients

- 1 cup chopped carrots
- 1 cup chopped celery
- 1 cup chopped potatoes
- 1 cup frozen peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 1/4 cup flour
- 2 cups vegetable broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1 tablespoon soy sauce
- 1 pre-made vegan pie crust
Instructions
- Preheat oven to 400°F (200°C).
- In a large skillet, sauté onion, garlic, carrots, and celery until tender.
- Add potatoes and cook for another 5 minutes.
- Stir in flour and cook for 1 minute.
- Add vegetable broth, thyme, rosemary, and soy sauce. Cook until thickened.
- Remove from heat and stir in peas.
- Pour mixture into the pie crust.
- Cover with the top crust and make slits for steam.
- Bake for 30-35 minutes or until golden brown.
Notes
- Let the pie cool for a few minutes before serving.
- Feel free to add your favorite vegetables.
