- 1 1/2 cups pecans
- 1 cup maple syrup
- 1/2 cup coconut milk
- 1/4 cup coconut oil
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 pie crust
Instructions
- Preheat the oven to 350°F (175°C).
- In a blender, combine maple syrup, coconut milk, coconut oil, brown sugar, cornstarch, vanilla extract, and salt. Blend until smooth.
- Chop half of the pecans and mix them into the blended mixture.
- Pour the mixture into the pie crust.
- Top with remaining whole pecans.
- Bake for 50-60 minutes, or until set.
- Allow to cool before serving.
Notes
- Store leftovers in the refrigerator.
- Serve with vegan whipped cream for added flavor.
