Ingredients

  • 1 1/2 cups pecans
  • 1 cup maple syrup
  • 1/2 cup coconut milk
  • 1/4 cup coconut oil
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 pie crust

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine maple syrup, coconut milk, coconut oil, brown sugar, cornstarch, vanilla extract, and salt. Blend until smooth.
  3. Chop half of the pecans and mix them into the blended mixture.
  4. Pour the mixture into the pie crust.
  5. Top with remaining whole pecans.
  6. Bake for 50-60 minutes, or until set.
  7. Allow to cool before serving.
