Description

Ingredients

  • 1 cup lentils, cooked
  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup nutritional yeast
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix cooked lentils, breadcrumbs, nutritional yeast, onion, garlic, soy sauce, olive oil, Italian seasoning, salt, and pepper.
  3. Form the mixture into small balls.
  4. Place the meatballs on a baking sheet lined with parchment paper.
  5. Bake for 25 minutes, turning halfway through.
  6. While baking, prepare the gravy.
  7. In a saucepan, combine 2 cups vegetable broth, 1 tablespoon gluten-free flour, and seasonings. Cook until thickened.
  8. Serve meatballs with gravy on top.
