Ingredients

- 1 cup lentils, cooked
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup nutritional yeast
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix cooked lentils, breadcrumbs, nutritional yeast, onion, garlic, soy sauce, olive oil, Italian seasoning, salt, and pepper.
- Form the mixture into small balls.
- Place the meatballs on a baking sheet lined with parchment paper.
- Bake for 25 minutes, turning halfway through.
- While baking, prepare the gravy.
- In a saucepan, combine 2 cups vegetable broth, 1 tablespoon gluten-free flour, and seasonings. Cook until thickened.
- Serve meatballs with gravy on top.
Notes
- Store leftovers in the fridge for up to 3 days.
- These meatballs can be frozen for later use.
