- 1 cup almond milk
- 1/2 cup coconut sugar
- 1/4 cup vegetable oil
- 1/4 cup matcha powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, matcha, baking powder, baking soda, and salt.
- In another bowl, combine almond milk, coconut sugar, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fill cupcake liners with the batter.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- You can add vegan frosting for extra sweetness.
- Store leftovers in an airtight container.
