A simple and nutritious vegan lentil dish.
Ingredients

- 1 cup lentils
- 2 cups vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- 2 tablespoons olive oil
Instructions
- Rinse lentils under cold water.
- In a pot, heat olive oil over medium heat.
- Add onion and garlic, sauté until soft.
- Add carrots, cook for 5 minutes.
- Stir in lentils, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes.
- Season with salt and pepper.
- Serve warm.
Notes
- Store leftovers in an airtight container.
- Reheat on the stove or microwave.
