Ingredients

  • 1 cup lentils
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Rinse lentils under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onion and garlic, sauté until soft.
  4. Add carrots, cook for 5 minutes.
  5. Stir in lentils, vegetable broth, cumin, and paprika.
  6. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  7. Season with salt and pepper.
  8. Serve warm.
