Description

A hearty vegan lentil bolognese sauce perfect for pasta.


Ingredients

Scale
  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Pasta of choice

Instructions

  1. Rinse the lentils and set aside.
  2. Heat olive oil in a pan over medium heat.
  3. Add onion, garlic, carrot, and celery. Sauté until soft.
  4. Add lentils, crushed tomatoes, tomato paste, oregano, basil, and salt.
  5. Simmer for 30 minutes until lentils are tender.
  6. Cook pasta according to package instructions.
  7. Serve the bolognese sauce over the pasta.
