A delicious vegan version of the classic shawarma, made with marinated vegetables and served with a flavorful sauce.
Ingredients

- 1 cup mushrooms, sliced
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 1 tablespoon olive oil
- 2 teaspoons shawarma spice blend
- 4 pita bread
- 1 cup tahini sauce
- 1 cup lettuce, shredded
- 1 tomato, diced
- 1 cucumber, diced
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix olive oil and shawarma spice blend.
- Add mushrooms, bell peppers, and zucchini to the bowl and coat them well.
- Spread the vegetables on a baking sheet and roast for 20 minutes.
- Warm the pita bread in the oven for 5 minutes.
- Assemble the shawarma by placing roasted vegetables, lettuce, tomato, and cucumber in the pita.
- Drizzle tahini sauce over the filling.
- Wrap the pita and serve immediately.
