Description
This vegan Hungarian goulash is a hearty and flavorful stew made with vegetables and spices.
Ingredients

- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 bell peppers, chopped
- 2 medium potatoes, diced
- 1 can diced tomatoes (14 oz)
- 3 cups vegetable broth
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the onion and garlic, sauté until softened.
- Stir in the carrots and bell peppers, cook for 5 minutes.
- Add potatoes, diced tomatoes, vegetable broth, paprika, caraway seeds, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Check for seasoning and adjust if necessary.
- Serve hot, garnished with fresh parsley.
Notes
- This dish can be made in advance and reheated.
- Adjust the thickness by adding more or less broth.
- Serve with crusty bread for a complete meal.
