Description

This vegan Hungarian goulash is a hearty and flavorful stew made with vegetables and spices.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 bell peppers, chopped
  • 2 medium potatoes, diced
  • 1 can diced tomatoes (14 oz)
  • 3 cups vegetable broth
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Stir in the carrots and bell peppers, cook for 5 minutes.
  4. Add potatoes, diced tomatoes, vegetable broth, paprika, caraway seeds, salt, and pepper.
