Crispy and flavorful vegan hash browns made from shredded potatoes.
Ingredients

- 4 medium potatoes, peeled and grated
- 1 small onion, finely chopped
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Grate the potatoes and soak them in cold water for 15 minutes.
- Drain and squeeze out excess water from the potatoes.
- In a mixing bowl, combine potatoes, onion, salt, and pepper.
- Heat olive oil in a non-stick skillet over medium heat.
- Scoop the potato mixture into the skillet and flatten it with a spatula.
- Cook for 5-7 minutes until golden brown, then flip and cook the other side.
- Remove from skillet and drain on paper towels before serving.
Notes
- Adjust spices to your preference.
- Serve with ketchup or your favorite dipping sauce.
