Description

A delicious vegan twist on traditional gyros.


Ingredients

  • 1 cup cooked chickpeas
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 pita breads
  • 1 cup sliced cucumbers
  • 1 cup diced tomatoes
  • 1/2 cup vegan tzatziki sauce

Instructions

  1. In a bowl, mix chickpeas with olive oil and spices.
  2. Heat a skillet over medium heat and sauté the chickpea mixture for 5 minutes.
  3. Warm the pita breads in a separate pan.
  4. Assemble the gyros by placing chickpeas, cucumbers, tomatoes, and tzatziki in each pita.
  5. Serve immediately and enjoy.

Notes

  • Feel free to add other veggies like onions or lettuce.
  • Store leftover chickpea mixture in the fridge for up to 3 days.
