A delicious vegan twist on traditional gyros.
Ingredients

- 1 cup cooked chickpeas
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 pita breads
- 1 cup sliced cucumbers
- 1 cup diced tomatoes
- 1/2 cup vegan tzatziki sauce
Instructions
- In a bowl, mix chickpeas with olive oil and spices.
- Heat a skillet over medium heat and sauté the chickpea mixture for 5 minutes.
- Warm the pita breads in a separate pan.
- Assemble the gyros by placing chickpeas, cucumbers, tomatoes, and tzatziki in each pita.
- Serve immediately and enjoy.
Notes
- Feel free to add other veggies like onions or lettuce.
- Store leftover chickpea mixture in the fridge for up to 3 days.
