Ingredients

- 2 cups grated carrots
- 1 cup almond flour
- 1 cup gluten free all-purpose flour
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/2 cup unsweetened applesauce
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix grated carrots, almond flour, gluten free flour, and chopped walnuts.
- In another bowl, combine maple syrup, melted coconut oil, and applesauce.
- Add the wet ingredients to the dry ingredients.
- Mix in baking soda, baking powder, cinnamon, nutmeg, and salt.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cake cool before serving.
Notes
- Store leftovers in an airtight container.
- Can be topped with vegan cream cheese frosting.
- Use fresh carrots for best flavor.
