Ingredients

  • 1 cup almond flour

  • 1/4 cup coconut oil, melted
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix grated carrots, almond flour, gluten free flour, and chopped walnuts.
  3. In another bowl, combine maple syrup, melted coconut oil, and applesauce.
  4. Add the wet ingredients to the dry ingredients.
  5. Mix in baking soda, baking powder, cinnamon, nutmeg, and salt.
  6. Pour the batter into a greased cake pan.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let the cake cool before serving.
