Description
A hearty vegan German potato soup that warms you up.
Ingredients

- 4 medium potatoes, peeled and diced
- 1 large onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 2 carrots, diced
- 1 teaspoon thyme
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, sauté onions and garlic until translucent.
- Add potatoes, carrots, and thyme. Stir well.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 20 minutes.
- Add coconut milk and blend until smooth.
- Season with salt and pepper to taste.
- Serve hot and enjoy.
Notes
- This soup can be refrigerated for up to three days.
- For a thicker texture, blend longer.
