A collection of vegan recipes for a festive Christmas meal.
Ingredients

- 2 cups of quinoa
- 1 cup of vegetable broth
- 1 cup of chopped vegetables (bell peppers, carrots, peas)
- 1 can of black beans, drained and rinsed
- 1 tablespoon of olive oil
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and let it simmer for 15 minutes.
- In a separate pan, heat olive oil and sauté chopped vegetables until tender.
- Add black beans, cumin, salt, and pepper to the pan. Stir well.
- Once quinoa is cooked, fluff it with a fork.
- Combine quinoa with the vegetable mixture.
- Garnish with fresh herbs before serving.
Notes
- This dish can be served warm or chilled.
- Feel free to add your favorite vegetables.
- Can be made ahead and stored in the refrigerator.
