Description

Ingredients

  • 2 cups of quinoa
  • 1 cup of vegetable broth
  • 1 cup of chopped vegetables (bell peppers, carrots, peas)
  • 1 can of black beans, drained and rinsed
  • 1 tablespoon of olive oil
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and let it simmer for 15 minutes.
  4. In a separate pan, heat olive oil and sauté chopped vegetables until tender.
  5. Add black beans, cumin, salt, and pepper to the pan. Stir well.
  6. Once quinoa is cooked, fluff it with a fork.
  7. Combine quinoa with the vegetable mixture.
  8. Garnish with fresh herbs before serving.
