Ingredients

  • 2 cups vegetable broth

  • 2 cloves garlic, minced

  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, heat olive oil over medium heat.
  3. Add onions, carrots, and celery; sauté until soft.
  4. Add garlic, thyme, and rosemary; cook for 1 minute.
  5. Add quinoa and vegetable broth; bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes.
  7. Fluff quinoa with a fork and season with salt and pepper.
