Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt to taste
- Pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, heat olive oil over medium heat.
- Add onions, carrots, and celery; sauté until soft.
- Add garlic, thyme, and rosemary; cook for 1 minute.
- Add quinoa and vegetable broth; bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and season with salt and pepper.
Notes
- Adjust seasoning as needed.
- Serve with your choice of vegan gravy.
