Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of cranberries
- 1 cup of chopped nuts
- 1 tablespoon of olive oil
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 tablespoon of fresh rosemary
- 1 tablespoon of fresh thyme
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add cranberries and nuts, stirring gently.
- Drizzle with olive oil and season with salt, pepper, rosemary, and thyme.
- Serve warm.
