A delicious vegan chocolate chip banana bread that is moist and easy to make.

- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- 1/2 cup vegan chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the bananas until smooth.
- Add melted coconut oil, maple syrup, and vanilla extract to the bananas and mix well.
- Stir in baking soda and salt.
- Add flour and mix until just combined.
- Fold in vegan chocolate chips.
- Pour the batter into a greased loaf pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let it cool before slicing.
Notes
- Store leftovers in an airtight container.
- Best enjoyed within a few days.
- Can be frozen for later use.
