This is a simple vegan chickpea curry that is oil-free and packed with flavor.
Ingredients

- 2 cans chickpeas, drained and rinsed
- 1 onion, chopped
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 can coconut milk
- 1 can diced tomatoes
- 2 cups spinach, chopped
- 2 tablespoons curry powder
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a pot, sauté onions, garlic, and ginger until soft.
- Add curry powder and cumin, stirring for 1 minute.
- Add chickpeas, coconut milk, and diced tomatoes. Stir well.
- Simmer for 15 minutes.
- Add spinach and cook until wilted.
- Season with salt and garnish with cilantro.
