Ingredients

  • 2 cans chickpeas, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 can coconut milk
  • 1 can diced tomatoes
  • 2 cups spinach, chopped

  • 1 teaspoon cumin

Instructions
