Ingredients

- 4 cups carrots, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 tablespoon olive oil
- 1 teaspoon ground ginger
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until softened.
- Add carrots, ginger, salt, and pepper, stir well.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 20 minutes until carrots are tender.
- Blend the mixture until smooth.
- Stir in coconut milk and heat through.
Notes
- Adjust seasoning to your taste.
- Serve with crusty bread.
- Can be stored in the fridge for up to 5 days.
