A delicious vegan dessert combining caramel, apple, and cheesecake flavors.
Ingredients

- 1 cup of cashews, soaked
- 1/2 cup of coconut cream
- 1/4 cup of maple syrup
- 1/4 cup of almond milk
- 1 cup of apples, diced
- 1/2 cup of dates, pitted
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of cinnamon
- 1/4 cup of vegan butter
- 1 cup of graham cracker crumbs
Instructions
- Preheat the oven to 350°F (175°C).
- Blend cashews, coconut cream, maple syrup, almond milk, vanilla, and cinnamon until smooth.
- Mix graham cracker crumbs with melted vegan butter.
- Press crumb mixture into the bottom of a springform pan.
- Layer diced apples over the crust.
- Pour the cashew mixture over the apples.
- Bake for 30 minutes.
- Let cool, then refrigerate for 4 hours.
- Serve with additional caramel sauce on top.
Notes
- Ensure cashews are soaked for at least 4 hours.
- Use fresh apples for best flavor.
- Adjust sweetness by adding more maple syrup if desired.
