Ingredients

  • 1 cup of cashews, soaked
  • 1/2 cup of coconut cream
  • 1/4 cup of maple syrup
  • 1/4 cup of almond milk
  • 1 cup of apples, diced
  • 1/2 cup of dates, pitted
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of cinnamon
  • 1/4 cup of vegan butter
  • 1 cup of graham cracker crumbs

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Blend cashews, coconut cream, maple syrup, almond milk, vanilla, and cinnamon until smooth.
  3. Mix graham cracker crumbs with melted vegan butter.
  4. Press crumb mixture into the bottom of a springform pan.
  5. Layer diced apples over the crust.
  6. Pour the cashew mixture over the apples.
  7. Bake for 30 minutes.
  8. Let cool, then refrigerate for 4 hours.
  9. Serve with additional caramel sauce on top.
