Description

A delicious vegan calzone filled with fresh vegetables and plant-based cheese.


Ingredients

  • 2 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3/4 cup warm water
  • 1 tablespoon olive oil
  • 1 cup spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup bell pepper, diced
  • 1 cup vegan cheese
  • 1 teaspoon Italian seasoning

Instructions

  1. In a bowl, mix warm water, sugar, and yeast. Let it sit for 5 minutes.
  2. Add flour, salt, and olive oil. Knead until smooth.
  3. Let the dough rise for 1 hour.
  4. In a pan, sauté spinach, mushrooms, and bell pepper until tender.
  5. Add vegan cheese and Italian seasoning to the vegetables.
  6. Preheat the oven to 400°F (200°C).
  7. Roll out the dough and cut into circles.
  8. Fill each circle with the vegetable mixture.
  9. Fold the dough over and seal the edges.
  10. Bake for 20-25 minutes or until golden brown.

Notes

  • Can add other vegetables as desired.
  • For a spicy kick, add red pepper flakes.
  • Store leftovers in the fridge for up to 3 days.
