Description
A delicious vegan calzone filled with fresh vegetables and plant-based cheese.
Ingredients

- 2 cups all-purpose flour
- 1 packet active dry yeast
- 1 teaspoon sugar
- 1 teaspoon salt
- 3/4 cup warm water
- 1 tablespoon olive oil
- 1 cup spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup bell pepper, diced
- 1 cup vegan cheese
- 1 teaspoon Italian seasoning
Instructions
- In a bowl, mix warm water, sugar, and yeast. Let it sit for 5 minutes.
- Add flour, salt, and olive oil. Knead until smooth.
- Let the dough rise for 1 hour.
- In a pan, sauté spinach, mushrooms, and bell pepper until tender.
- Add vegan cheese and Italian seasoning to the vegetables.
- Preheat the oven to 400°F (200°C).
- Roll out the dough and cut into circles.
- Fill each circle with the vegetable mixture.
- Fold the dough over and seal the edges.
- Bake for 20-25 minutes or until golden brown.
Notes
- Can add other vegetables as desired.
- For a spicy kick, add red pepper flakes.
- Store leftovers in the fridge for up to 3 days.
