Description

A fresh and healthy vegan take on the classic Caesar salad, featuring chickpeas for protein.


Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 can of chickpeas, rinsed and drained
  • 1/4 cup of vegan Caesar dressing
  • 1/4 cup of nutritional yeast
  • 1/4 cup of croutons
  • 1 tablespoon of lemon juice
  • Salt and pepper to taste

Instructions

  1. Chop the romaine lettuce and place it in a large bowl.
  2. Add the rinsed chickpeas to the bowl.
  3. Drizzle the vegan Caesar dressing and lemon juice over the salad.
  4. Sprinkle nutritional yeast on top.
  5. Add croutons for crunch.
