A fresh and healthy vegan take on the classic Caesar salad, featuring chickpeas for protein.
Ingredients

- 1 head of romaine lettuce, chopped
- 1 can of chickpeas, rinsed and drained
- 1/4 cup of vegan Caesar dressing
- 1/4 cup of nutritional yeast
- 1/4 cup of croutons
- 1 tablespoon of lemon juice
- Salt and pepper to taste
Instructions
- Chop the romaine lettuce and place it in a large bowl.
- Add the rinsed chickpeas to the bowl.
- Drizzle the vegan Caesar dressing and lemon juice over the salad.
- Sprinkle nutritional yeast on top.
- Add croutons for crunch.
- Toss everything together gently.
- Season with salt and pepper to taste.
Notes
- For extra flavor, add avocado slices.
- Store leftovers in an airtight container in the fridge.
