Description

A delicious vegan dish made with baked gnocchi, vegetables, and a rich tomato sauce.


Ingredients

  • 1 pack of gnocchi (500g)
  • 2 cups of cherry tomatoes
  • 1 zucchini, diced
  • 1 bell pepper, diced
  • 2 cups of spinach
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pan, heat olive oil over medium heat.
  3. Add garlic and sauté until fragrant.
  4. Add cherry tomatoes, zucchini, and bell pepper. Cook until softened.
  5. Stir in spinach and cook until wilted.
  6. Combine the cooked vegetables with gnocchi and season with salt and pepper.
  7. Transfer the mixture to a baking dish.
  8. Bake for 20 minutes or until golden.
  9. Garnish with fresh basil before serving.
