A delicious vegan dish made with baked gnocchi, vegetables, and a rich tomato sauce.
Ingredients

- 1 pack of gnocchi (500g)
- 2 cups of cherry tomatoes
- 1 zucchini, diced
- 1 bell pepper, diced
- 2 cups of spinach
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt to taste
- Pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- In a large pan, heat olive oil over medium heat.
- Add garlic and sauté until fragrant.
- Add cherry tomatoes, zucchini, and bell pepper. Cook until softened.
- Stir in spinach and cook until wilted.
- Combine the cooked vegetables with gnocchi and season with salt and pepper.
- Transfer the mixture to a baking dish.
- Bake for 20 minutes or until golden.
- Garnish with fresh basil before serving.
Notes
- Feel free to add any other vegetables you like.
- Serve with a side salad for a complete meal.
