A healthy and delicious vegan baked banana oatmeal recipe.
Ingredients

- 2 ripe bananas
- 2 cups rolled oats
- 1 cup almond milk
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup walnuts, chopped (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mash the bananas.
- Add almond milk, maple syrup, and vanilla extract to the mashed bananas. Mix well.
- In another bowl, combine rolled oats, baking powder, cinnamon, and salt.
- Pour the wet ingredients into the dry ingredients. Stir until combined.
- If using, fold in the chopped walnuts.
- Pour the mixture into a greased baking dish.
- Bake for 25-30 minutes or until the top is golden brown.
- Let cool slightly before serving.
Notes
- Store leftovers in the refrigerator.
- Can be reheated in the microwave.
- Serve with fresh fruit or nut butter for added flavor.
