Description
A healthy and delicious vegan asparagus soup that is easy to make.
Ingredients

- 1 pound fresh asparagus, trimmed and cut into pieces
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, and sauté until softened.
- Add asparagus and cook for another 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes until asparagus is tender.
- Puree the soup using an immersion blender until smooth.
- Season with salt and pepper to taste.
- Serve warm.
Notes
- Use fresh asparagus for the best flavor.
- You can add nutritional yeast for a cheesy flavor.
- Store leftovers in the refrigerator for up to 3 days.
