- 1 lb ground beef
- 1 cup rice
- 2 cups bell peppers, chopped
- 1 can diced tomatoes
- 1 cup onion, chopped
- 2 cups beef broth
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt, to taste
- Pepper, to taste
Instructions
- Brown the ground beef in a large skillet over medium heat.
- Add the chopped onion and bell peppers. Cook until softened.
- Stir in the garlic powder and Italian seasoning.
- Add the diced tomatoes, rice, and beef broth. Mix well.
- Bring to a boil, then reduce heat and cover. Simmer for 20 minutes.
- Remove from heat and let sit for 5 minutes before serving.
Notes
- Substitute ground turkey for a lighter option.
- Add cheese on top before serving, if desired.
