Description
A refreshing salad made with chickpeas and tzatziki.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1 cup plain Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon fresh dill, chopped
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine chickpeas, cucumber, tomatoes, and red onion.
- In a separate bowl, mix yogurt, garlic, dill, lemon juice, salt, and pepper.
- Pour the tzatziki dressing over the salad ingredients.
- Toss gently to combine.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Serve cold for best flavor.
- Can add olives or feta for extra taste.
- Storage: Keep in the fridge for up to 3 days.
