Description

A refreshing salad made with chickpeas and tzatziki.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chickpeas, cucumber, tomatoes, and red onion.
  2. In a separate bowl, mix yogurt, garlic, dill, lemon juice, salt, and pepper.
  3. Pour the tzatziki dressing over the salad ingredients.
  4. Toss gently to combine.
  5. Chill in the refrigerator for 30 minutes before serving.
